<p>2. Take 1 cup of all purpose flour/maida and add the ground paste, ajwain, salt, asafoetida and mix well by adding water little by little and form a smooth dough. Keep it aside for 20 to 30 min.</p>

<p>3. Make small equal sized balls with the dough. Take one ball and flatten it using chappathi roller as we do it for roti or chappathi&#8217;s. Make it into 2mm to 3mm thin if possible.</p>

<p>4. Now using a cookie cutter cut the rolled dough into diamond shapes and remove slowly from the chappathi maker and collect in a bowl or plate.</p>

<p>5. Now in a kadai heat oil and first out a pinch of dough to it don&#8217;t harbor immediately raises up. Now fry the cut pieces into oil in small batches. When they turn light brown on both the sides remove from oil and filter the excess oil in kitchen tissue.</p>

<p>2. In a vessel add water and when it is boiling, add the butter, salt and the soaked dal.</p>

<p>3. Give a stir and add the rice flour to the boiling water and immediately switch off the water. Mix the rice flour thoroughly and cover and keep aside, until it comes to room temperature.</p>

<p>4. When the dough comes to room temperature (light warm temperature should be ok) add the chilli powder, cumin seeds, sesame seeds and salt if necessary.</p>

<p>5. Make into a smooth dough. If the dough is dry, add a tsp of water and not more than that.<br />6. Now apply oil in your hand. Take a small portion of dough and roll into a strip of length 6 cm approx. and join the ends and press slightly to make a ring shaped.</p>

<p>7. Ask your kids to help and they can enjoy making it. (Of course they will make some different shaped murukkus&#8230; ). Do the same for the rest of the dough.<br />8. Heat the oil in a vessel and when is very hot, slowly drop the murukku in small batchs.</p>

The name itself looks different for me, when my mom told, that she will prepare this snack in the evening. I said ok. When I returned from office, last&nbsp;Saturday&nbsp; she gave me these. It is similar to maida diamond cuts. When I asked her, she said, she did with wheat flour because of health reasons. Also when I asked her, why it is called as galagala, she just said, when it is shaken, it sounds like that, so it is called as galagala. But she also does not know the actual name. Friends, if any of you know this is the actual reason it is named as galagala or any other reason behind it, plz share.</div>

<p><b>Ingredients</b></p>
<ul style="text-align: left;">
<li>Wheat flour &#8211; 2 cup</li>
<li>Cumin seeds/jeera &#8211; 1 tsp</li>
<li>Chilli powder &#8211; 1 tsp (adjusted according to taste)</li>
<li>Asafoetida &#8211; 2 pinches</li>
<li>Rice flour &#8211; 2 tsp</li>
<li>Bicarbonate of soda &#8211; 1/5 tsp</li>
<li>Salt &#8211; as per paste</li>
<li>Water &#8211; 1/2 cup</li>
<li>Oil &#8211; for frying</li>
</ul>

<p><b>Method</b></p>
<ul style="text-align: left;">
<li>Add all the ingredients except oil in a vessel.</li>
<li>Add just 2 tsp oil to it.</li>
<li>Make a soft dough and leave the dough for 15 min.</li>
<li>Take small portion of the dough and roll like a chappathi.</li>
<li>Cut into diamond shapes.</li>
<li>Heat oil in a kadai in medium heat.</li>
<li>Fry the galagala in batches and when they are slightly brown, remove from oil.</li>
<li>Store in a airtight container.</li>
</ul>
