<div dir="ltr" style="text-align: left;">When I announced the event, Dish name starts with N, the first dish that came to my mind is Nankhatai and others being Nutella recipes&#8230; So today we will see the Nankhatai and in the coming posts, we will see some Nutella recipes&#8230;<span style="background-color: white;">While browsing for the Nankhatai recipe, I came across recipes which was calling for different ingredients in each recipe&#8230; So I called to my North Indian friend, to check with the recipe and decided to go with it&#8230; Here is the recipe&#8230;</span></p>

<li><span style="background-color: white;">Ravai/Sooji/Semoline &#8211; 2 tsp</span></li>
<li><span style="background-color: white;">Cardamom crushed &#8211; 1 tsp</span></li>
<li><span style="background-color: white;">Baking soda &#8211; 1/2 tsp</span></li>
<li><span style="background-color: white;">Butter &#8211; 1 cup/1 stick (I used salted at room temperature)</span></li>
<li><span style="background-color: white;">Sugar &#8211; 1.5 cups</span></li>
<li><span style="background-color: white;">Pistachios &#8211; crushed</span></li>

<li><span style="background-color: white;">Preheat the oven to 150 deg Celcious.</span></li>
<li><span style="background-color: white;">Add the Maida in a bowl.</span></li>

<p><b>Method</b></p>
<ul style="text-align: left;">
<li>Mix the flour and ghee.</li>
<li>Then add all the other ingredients except milk and mix well.</li>
<li>Now add milk little by little till you get a smooth dough consistency.</li>
<li>Now roll the dough as you do for a chappathi to a 1/4 inch thickness.</li>
<li>Cut the dough to desired shapes and arrange it in a baking tray.</li>
<li>Place the dough to the preheated oven to 180 deg C.</li>
<li>Bake it for 15 min and check whether the sides have becomes slight brown. If so, then remove from oven, cool down.</li>
<li>The crispy khara/masala biscuits are ready and have it immediately or store in an air tight container.</li>

<p><b>Method</b></p>
<ul style="text-align: left;">
<li>Beat the butter and powdered sugar untill fluffy.</li>
<li>To this, add the flour, custard powder, corn flour and curd and make it to a dough.</li>
<li>Spread on a flat bottomed surface and using a rolling pin roll it to a 5 mm thickness. ( i used chappathi roll )</li>

<li>Now cut into desired shape and put a hole in the middle.</li>
<li>Arrange the biscuits in the baking tray.</li>
<li>Put the jam into the hole.</li>
<li>Preheat the oven to 180 degree&nbsp;Celsius and bake it&nbsp;for 15 min or till the corner becomes brown .</li>
<li>Remove from the tray and cool it and store it in an airtight container.</li>

<li>In another bowl, mix the all purpose flour, powdered hazelnuts, baking soda and baking powder and salt.</li>

<li>Make the smooth dough with the mixture and make into small balls.</li>

<li>Now arrange the balls, in the baking tray and flatten a little bit.</li>
<li>Bake it for 15 to 20 min or until they become brown in colour and allow to cool.</li>
<li>Store it in an air tight container for 2 weeks.</li>

<li><span style="font-size: 16px;"><span style="font-family: inherit;"><span style="font-family: inherit;">In a vessel,</span>&nbsp;mix&nbsp;the butter and sugar well untill the butter becomes fluffy.</span></span></li>

<li><span style="font-family: inherit;">Fry the grated coconut till slight brown and keep it ready.</span></li>
<li><span style="font-family: inherit;">Now add in the other ingredients along with coconut together and mix well.</span></li>
<li><span style="font-family: inherit;">Make them in small balls and then press slightly in your palms.</span></li>
<li><span style="font-family: inherit;">Meanwhile preheat the oven to 180 C.</span></li>
<li><span style="font-family: inherit;">Arrage the&nbsp;cookies&nbsp;in the baking tray leaving 1 to 2&nbsp;inch&nbsp;gap inbetween the cookies.</span></li>
<li><span style="font-family: inherit;">Bake for 20 mins or untill the cookies becomes brown in colour.</span></li>
<li><span style="font-family: inherit;">When the cookies are ready, remove from oven and allow to cool for&nbsp;5 min.</span></li>
<li><span style="font-family: inherit;">Crispy, Healthy and Tasty cookies are ready&nbsp;and store in a air&nbsp;tight&nbsp;container&nbsp;for future use.</span></li>

<p><strong>Method</strong></p>
<ul>
<li>In a vessel, mix the butter and sugar well untill the butter becomes fluffy.</li>
<li>Now add in the other ingredients together and mix well.</li>
<li>Make them in small balls and then press slightly in your palms.</li>
<li>Meanwhile preheat the oven to 180 C.</li>
<li>Arrage the cookies in the baking tray leaving 1 to 2 inch gap inbetween the cookies.</li>
<li>Bake for 20 mins or untill the cookies becomes brown in colour.</li>
<li>When the cookies are ready, remove from oven and allow to cool for&nbsp;5 min.</li>
<li>Crispy, Healthy and Tasty cookies are ready&nbsp;and store in a air tight container for future use.</li>

<li>Mix the butter and sugar in a vessel nicely untill they become fluffy. (the butter must be at room temperature)</li>

<li>Meanwhile preheat the oven to 180 deg C.</li>

<p><b>What is you take on organic food, is it a big deal for you?</b><br />Yes, i go for organic food whenever i find time.</p>
<p><b>Do you find time your breakfast, lunch 7 dinner or eat when you are hungry?</b><br />Never find time to take breakfast now a days. Only lunch and dinner ok.</p>
<p><b>What inspired you to write a food blog?</b><br />After marriage i was very new to cooking and i always call my mother and ask for the ingredients and recipes and used to write what she says in a note book or paper. But it made me bore to try the same dishes everytime. So i started searching the net for any recipes and came across the blogs and also i want to save all my collections together. Like this i started the blog. Though i started a blog by 2007 itself, i could able to continue it. But again started a new one with a new look by 2010 and it is Learning to cook.</p>
<p><b>You try a new recipe and it does not turn out good. What will you do?</b><br />I will not leave it until it turns out good to my satisfaction.</p>
<p><b>Name 3 ingredients you consciously avoid or eliminate even when the recipe calls for it?</b><br />I try to avoid egg in any cookies or cake since my mom wont eat egg and try to reduce the masala items (cant say particularly).</p>
<p><b>Name 3 things you have to use in most recipes?</b><br />Onion, Tomato, Ginger &#8211; Garlic paste.</p>
<p><b>How important is eating meals together as a family to you?</b><br />Its very import, but we find time only while having dinner.</p>
<p><b>You do not like a particular dish at your favorite restaurant, what will you do?</b><br />I will call the Manager or Server and let them know, it is not good.</p>

<li>Baking soda &#8211; 1/4 tsp</li>

<li>Now in the butter add the all purpose flour, baking soda and baking powder and mix well.</li>

<li>Make in to small balls and flatten a little bit with your palms and arrange them in the tray leaving gap inbetween and bake them for 20 to 25 min.</li>
<li>Store the cooking in air tight container for its longer life. (In my case, it is over within 1 hr).</li>

<li>Sugar &#8211; 3/4th cup (can be adjusted according to taste)</li>
<li>Salted butter &#8211; 1/2 cup (room temperature)</li>
<li>Baking powder &#8211; 1/2 tsp</li>
<li>Baking soda &#8211; 2 pinch</li>
<li>Dates &#8211; 6 to 8</li>
<li>Cashews &#8211; few (optional)</li>

<li style="border-bottom: medium none; border-left: medium none; border-right: medium none; border-top: medium none;">If you could make a dough with these ingredients, then no need to add water or milk. Else add water or milk, little by little and make a dough.</li>
