<p>In some hotels the color and texture of the chutney simple attracts us too much. And there is a saying that, we can eat more idli&#8217;s based on the taste of the chutney&#8217;s alone. One such chutney is this kaara chutney recipe. Today we see how to make the hotel style chutney. </p>

I also personally prefer the rock salt or himalayan salt for the chutney.</div></li><li id="wprm-recipe-5150-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Saute the ingredients well, until the onion becomes translucent. Now add the chopped tomato and the red chillies. The tomatoes must be tangy for this recipe, else you can add a little tamarind to this. Also adjust the chillies according to your spice level. The added chillies are spicy enough for our family taste buds.</div></li><li id="wprm-recipe-5150-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Saute them again for a while. Now add the grated coconut and the kashmiri chilli powder.</div></li><li id="wprm-recipe-5150-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Saute till the water content goes off and switch off the stove. allow to cool down completely and transfer to a mixie jar or a food processor.</div></li><li id="wprm-recipe-5150-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">without adding any water, grind to a smooth paste. keep it aside.</div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Prepare the tempering</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-5150-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">To prepare the tempering, in a pan or vessel, add 2 tsp of gingelly oil and when hot, add the mustard, black gram (urud dal), and curry leaves. </span></div></li><li id="wprm-recipe-5150-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Now fry the dal till it turns light brown in color and switch off. <p>For this kaara chutney, add 2 tbsp of gingelly oil in a pan and when the oil is hot, add the onion, garlic and salt. I also personally prefer the rock salt or himalayan salt for the chutney. </p>

<p>Saute the ingredients well, until the onion becomes translucent. Now add the chopped tomato and the red chillies. The tomatoes must be tangy for this recipe, else you can add a little tamarind to this. Also adjust the chillies according to your spice level. The added chillies are spicy enough for our family taste buds.</p>

<p>Saute them again for a while. Now add the grated coconut and the kashmiri chilli powder.  This kashmiri chilli powder is added to give nice color to the chutney. If you have the kashmiri chilli itself, then you can add 1 or 2 in the above step itself. since I don&#8217;t have them in hand, I have added the powder. </p>

<p>Saute till the water content goes off and switch off the stove. allow to cool down completely and transfer to a mixie jar or a food processor.</p>

<h5 class="wp-block-heading">Prepare the tempering</h5>



<p>To prepare the tempering, in a pan or vessel, add 2 tsp of gingelly oil and when hot, add the mustard, black gram (urud dal), and curry leaves. If you want you can add one or two dry chilli. But as our chutney is spicy already, I have avoided adding the chilli here. </p>

<p>Now fry the dal till it turns light brown in color and switch off. Transfer the chutney to the serving bowl.</p>

<h2 class="wp-block-heading">Kadalai Paruppu Chutney | Chana Dal Chutney</h2>


<p><strong>Kadalai Paruppu Chutney | Channa dal Chutney</strong> can be made in two ways. One with tomato and without tomato. Here I have shown the one without tomato. when you are out of any vegetables, but still want to have chutney as your side dish for idli or dosa, then this chutney comes for help. You can adjust the consistency of this chutney as your wish ans either way it tastes too good. There is also another quick variety of garlic chutney that too doesnt require any vegetables other than garlic and I will post that recipe soon.</p>

<p>When I started preparing this chutney, I am out of my tomatoes and to compensate, added tamarind. Also here, I have added tamarind pulp instead of whole tamarind. This chutney turned out really awesome and I can bet you, you will definitely have 2 or more idlis if this kadalai paruppu chutney | Chana dal chutey is your side dish.</p>

<li>Oil &#8211; 3 tbsp</li>
<li>Tamarind pulp &#8211; 1/2 cup from a lemon size tamarind</li>
<li>Asafoetida &#8211; little</li>
<li>Salt as per taste</li>

<p><strong>To make chutney</strong></p>
<p>In a pan or kadai, add 2 to 3 tbsp of oil.</p>

<p>When oil is little hot add the ground paste.</p>

<p>Sauté the paste nicely, for 5 to 7 minutes. Add the tamarind paste.</p>

<p>After the tamarind paste is added cook for 10 to 12 min or until the oil oozes out in the sides.</p>

<p>Once the oil oozes out, Add the asafoedita and required salt.</p>

<p>Now cook the chutney, until it turns out red and the quantity becomes half.</p>

<p>Prepare the tempering now. For this add 1 tbsp oul and little mustard and when it splutters, add the urud dal and curry leaves.</p>

Keep aside.</div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">To make chutney</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-2821-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">In a pan or kadai, add 2 to 3 tbsp of oil.</div></li><li id="wprm-recipe-2821-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">When oil is little hot add the ground paste.</div></li><li id="wprm-recipe-2821-step-1-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Sauté the paste nicely, for 5 to 7 minutes.</div></li><li id="wprm-recipe-2821-step-1-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add the tamarind paste.</div></li><li id="wprm-recipe-2821-step-1-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">After the tamarind paste is added cook for 10 to 12 min or until the oil oozes out in the sides.</div></li><li id="wprm-recipe-2821-step-1-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Once the oil oozes out, Add the asafoedita and required salt.</div></li><li id="wprm-recipe-2821-step-1-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Now cook the chutney, until it turns out red and the quantity becomes half.</div></li><li id="wprm-recipe-2821-step-1-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Prepare the tempering now. For this add 1 tbsp oul and little mustard and when it splutters, add the urud dal and  curry leaves. Fry for a minute and transfer to the chutney.</div></li></ul></div></div>

<li>Some like to use tomatoes instead of tamarind pulp. When using them, If your tomatoes are tangy, then you can reduce the tamarind pulp to half its quantity.</li>

I prepared this for Instant oats dosa and the combination is just great. </span>This is an easy Chutney which can be prepared in just 10 minutes. When I am lazy to prepare some other chutney, this onion tomato chutney comes in a great help.</p>

<p><span style="font-family: sans-serif;">There are so many variations for this chutney in which you can add the garlic or you can fry the channa dal along with urud dal and grind together. Each one gives a different taste each time, which you can try in each time. </span></p>

<p style="font-family: sans-serif;">This chutney when mixed with the gingelly oil or ghee before serving gives a great taste and if you have added more chilli, then this will neutralize the spiciness.</p>

The taste and colour of this chutney depends on how much time we sauté the onion and tomato chutney and depends on the red chillies we use. If you use Kashmiri red chillies, it gives nice color but not that spicy. Andhra chillies give less color but more are spicy.</span></p>
