<p>This <strong>Quick Egg Fried Rice</strong> is one of our family favorite recipe and my kids used to ask me to prepare this at least twice a week. </p>



<p>Normally for a fried rice, lots of veggies are added to make the dish tastier and healthier. But for this Quick Egg Fried Rice, we do not need any veggies, yet the fried rice tastes really awesome. </p>



<p>Also as the name indicates, it can be prepared very quickly like just in 5  minutes of time, when you have the rice ready.</p>

(light soya is preferred in this recipe, so that it wont make the dish to be very brown.) (also soya sauce contains more salt, so while adding the salt, adjust carefully)</div></li><li id="wprm-recipe-5132-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">add the freshly ground black pepper powder as per your spiciness. You can also add the white pepper powder.</div></li><li id="wprm-recipe-5132-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Adjust and add the vinegar. Here I have added 1.5 tbsp only.</div></li><li id="wprm-recipe-5132-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Give a quick stir</div></li><li id="wprm-recipe-5132-step-0-8" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Now add the two bowls of rice. The rice should be 85 to 90 % cooked. If you are using freshly boiled rice, then keep the rice in fridge for  1 to 2 hours and then use it. but I prefer using the left over rice, which gives a great taste to this fried rice.</div></li><li id="wprm-recipe-5132-step-0-9" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Mix them well</div></li><li id="wprm-recipe-5132-step-0-10" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">add in 1 tbsp of oil and sprinkle some more pepper just before switching off the stove.</div></li><li id="wprm-recipe-5132-step-0-11" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Again give a quick stir and switch off the stove.</div></li><li id="wprm-recipe-5132-step-0-12" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Serve the tasty and easy egg fried rice with chilli sauce or soya sauce.</div></li></ul></div></div>

<p>Now turn the flame to high and from this time you need to keep the flame high only to make this fried rice. </p>

<p>Start frying the eggs until they become scrambled and 90 % cooked. </p>

<p>Lets add the salt, light soya sauce. (light soya is preferred in this recipe, so that it wont make the dish to be very brown.) (also soya sauce contains more salt, so while adding the salt, adjust carefully)</p>

<p>add the freshly ground black pepper powder as per your spiciness. You can also add the white pepper powder.</p>

<p>Now add the two bowls of rice. The rice should be 85 to 90 % cooked. If you are using freshly boiled rice, then keep the rice in fridge for  1 to 2 hours and then use it. but I prefer using the left over rice, which gives a great taste to this fried rice. </p>

<p>add in 1 tbsp of oil and sprinkle some more pepper just before switching off the stove.</p>

<p>Normally fried rice would not be that spicy but this one is unique from the ordinary ones. You definitely need some less spicy side dish like <a href="https://www.akilaskitchen.com/capsicum-raita-bell-pepper-raita-north-indian-raita-recipes-raita-for-biryani-easy-raita-recipes/">capsicum raita</a> or <a href="https://www.akilaskitchen.com/vegetable-raita-mixed-vegetable-raita-recipe-indian-raita-for-briyani-or-puloa/">mixed vegetable raita</a> for this spicy prawn fried rice.</p>



<p>Prawn fried rice is our family favourite. I have lots of prawn recipes and still love to try more and more. </p>



<p>This fried rice i tried recently and became an instant hit in our family. This can be prepared without more spiciness also. </p>



<p>In this, prawns are first marinated with chilli powder and soya sauce and fried and cooked for about 75 to 80% and used later. </p>

<p>In a bowl add the deveined and cleaned prawns. </p>

<p>To this add the salt, chilli powder, light soya sauce and vinegar. if you dont have vinegar, you can add the lemon juice also. </p>

<p>After about 30 minutes, in a big pan, add this marinated prawns. Saute them nicely so that prawns are almost cooked. It should be cooked for about 70 to 75% only. </p>

<p>To know that prawns are 75% cooked, it gets curled up nicely and water dries out. It is the correct stage to remove the prawns from the pan. </p>

<p>and when oil is hot add the ginger and garlic and fry in high flame.</p>

<p>also add the finely chopped onion and fry them too. If you want you can add 2 green chillies at this stage and fry them too. But i have not added here, as this spicy prawn fried rice is already spicy enough for our taste buds.</p>

<p>once the onion are nicely fried, add the capsicum and white part of the spring onions. Fry them in high flame.</p>

<p>In addition to it, add the soya sauce and the vinegar and mix them.</p>

<p>to this add the cooked prawns and green part of spring onions and again fry them in high flame. </p>

<p>Add little sugar so that it gives a nice sweet taste to the veggies and also maintains the colors of the added veggies.</p>

<p>now add the chilli sauce or tomato sauce, (i have added chilli sauce). In addition to it, add the pepper and salt as required.</p>

<p>Mix them well so that prawns gets fully cooked by this time. After that Add the boiled and cooked rice and fry them well in high flame so that they get a nice burnt flavor.</p>

<h2 class="wp-block-heading">How to make crumbled paneer fried rice </h2>



<p>Paneer fried rice recipe is an Indian fried rice recipe, in which paneer the cottage cheese is either added as cubes or crumbled and added.</p>



<p>This paneer is now fried in high flame along with other veggies in a Chinese wok or an iron kadai to get the nice smoky flavour. If you do not have the chinese wok, you can use your iron kadai or normal vessel, but try to fry the veggies and the paneer in high flame, so as to match the taste that we get in restaurants.</p>



<p>You can add your favourite veggies, but add them in less quantity so that i want take away the flavour of paneer in this paneer fried rice.</p>



<p>As i mentioned earlier, here you can add the paneer in cubes or crumble them and add. Here i have crumbled the paneer, so that i can get well mixed with rice. </p>



<p>Since this is a mild spicy dish, I sugest you to try the spicy dishes like &#8211; <a href="https://www.akilaskitchen.com/soya-chunks-gravy-meal-maker-gravy/">meal maker gravy</a> or <a href="https://www.akilaskitchen.com/chilli-chicken-how-to-make-chilli-chicken-recipe/">chilli chicken</a> as the side dish.</p>

<p>For 1 cup paneer, add 3 cups of cooked and cooled basmathi rice. You can also use other rice.</p>

<h4 class="wp-block-heading">Notes</h4>



<ul class="wp-block-list"><li>I used crumbled paneer here. If you use paneer cubes, then soak in warm water for 10 minutes and use. You can also fry the paneer separately and add it here.</li><li>For a perfect fried rice, either big chinese wok or big iron kadai is used. So try to use a thick bottomed vessel and fry all the veggies in high flame. If you are begginer, try to do in medium flame atleast.  </li><li>If you are using Basmati rice, it gives nice flavor. But you can also use other rice.</li><li>Whatever rice you use, while cooking the rice, add 1/2 tsp salt and 1 tsp oil. Also the rice should be 75 to 80 % cooked for a perfect fried rice. You can also keep them in fridge and use it. Just keep the rice out, before you start cooking the fried rice.</li><li>Olive oil gives a nice flavor. So try to use it.</li><li>Use the soya sauce and the vinegar in equal proportions. ( for 3 cups rice, 1 to 1.5 tsp is enough dont add more). Also chilli sauce is optional but gives the nice sweet taste.</li></ul>

<div>Vegetables used &#8211; any crunchy veggies works well. (Carrot, bell peppers, spring onions, bean sprouts, cabbage, etc)</div>
<div>Olive oil &#8211; 2 tbsp</div>
<div>Rice &#8211; 2 cups (Any long grained rice looks and tastes better)</div>
<div>Garlic &#8211; 1 tbsp (finely chopped)</div>
<div>Soya sauce &#8211; 2 to 3 tsp (adjust according to your taste)</div>
<div>Vinegar &#8211; 1 tbsp</div>
<div>Salt &#8211; as per taste</div>
<div>Sugar &#8211; 1 tsp (optional)</div>
<div>MSG/ajinomoto &#8211; 2 pinch (optional)</div>
<div>Pepper powder &#8211; 1/5 tsp</div>
<div>Spring onions &#8211; 3 tbsp</div>

<h5><b>Method for preparing veg fried rice<br />

<p>1. Wash the vegetables and keep it ready. Cook the rice with a pinch of salt and star anise and mace to 75%. Do not use more spices.</p>

<p>2. Filter out the water and cool down the rice as we want a grainy texture and not a mushy rice.</p>

<p>3. Now in a large skillet, add oil and when hot, add garlic. Fry for a minute. Add the vegetables and fry them in high flame.</p>

<p>4. Add sugar, so as to keep the colour of the veggies. Finally add the bell peppers as we want to retain the crunchiness of the capsicum.</p>

<p>5. Add the pepper powder and the msg. Fry for a minute. Add the soya sauce and vinegar and salt for <b>Chinese Style fried rice </b>and add only vinegar and salt form the <b>Indian style veg fried rice.</b> (This tip I took from <a href="http://indianhealthyrecipes.com/vegetable-fried-rice-indian-style/" target="_blank" rel="noopener noreferrer">here</a>).  Keep frying the vegetables.</p>

<div>6. Add the rice and mix it. Check for the salt now as the soya sauce already contains the salt. If less add the salt. Keep frying the rice too in high flame so that we get the smoky flavor in the rice which is what we want in the fried rice.</div>

<div>1. For fried rice any crunchy vegetables suits well. You can add cauliflower, broccoli, bean sprouts etc.,</div>

<div>4. Try to use the light soya sauce as dark soya sauce change the color of the rice.</div>

Cook the rice with a pinch of salt and star anise and mace to 75%. Do not use more spices.</div></li><li id="wprm-recipe-849-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Filter out the water and cool down the rice as we want a grainy texture and not a mushy rice.</div></li><li id="wprm-recipe-849-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Now in a large skillet, add oil and when hot, add garlic. Fry for a minute. Add the vegetables and fry them in high flame.</div></li><li id="wprm-recipe-849-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add sugar, so as to keep the colour of the veggies. Finally add the bell peppers as we want to retain the crunchiness of the capsicum.</div></li><li id="wprm-recipe-849-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add the pepper powder and the msg. Fry for a minute. Add the soya sauce and vinegar and salt for Chinese Style fried rice and add only vinegar and salt form the Indian style veg fried rice. (This tip I took from here).  Keep frying the vegetables.</div></li><li id="wprm-recipe-849-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add the rice and mix it. Check for the salt now as the soya sauce already contains the salt. If less add the salt. Keep frying the rice too in high flame so that we get the smoky flavor in the rice which is what we want in the fried rice.</div></li><li id="wprm-recipe-849-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Yummy and tasty Vegetable Fried Rice is ready.</div></li><li id="wprm-recipe-849-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Garnish with spring onions and serve it.</div></li></ul></div></div>

<div style="clear: both; text-align: left;">When hot, add egg and stir rapidly to break it up.</div>

<li>Briyani Rice &#8211; 2 cups</li>
<li>Oil &#8211; 2 tsps</li>
<li>Ghee 3 tsps</li>
<li>Onion &#8211; 1 big</li>
<li>Garlic &#8211; Chopped finely</li>
<li>Green chilli &#8211; 2</li>
<li>Ginger garlic paste &#8211; 1/2 tsp</li>
<li>Black Pepper &#8211; 1 tsp</li>
<li>White Pepper &#8211; 1/2 tsp</li>
<li>Salt &#8211; as required</li>
<li>Curry leaves &#8211; few</li>
<li>Cilantro for garnishing</li>
<li>Water &#8211; 3 cups</li>
</ul>
<p><strong>Method</strong></p>
<ul>
<li>In&nbsp;a pan, add ghee and rice and fry for 3 mts.</li>
<li>Cook the rice with 3 cups of water.</li>
<li>In a kadai, add onion, garlic, green chillies, ginger garlic paste, curry leaves, prawns, salt and cook, till prawns becomes curved. (Inbetween&nbsp; add little water to cook the prawns).</li>
<li>Add the pepper powders and mix well and again cook for another 5 mts.</li>
<li>Add the boiled rice to this gravy and mix thoroughly and serve hot with any raitha.</li>
