<li>Ragi aval &#8211; 1 cup </li>



<li>water &#8211; 1/2 cup </li>



<li>eggs &#8211; 4 (for vegetarian version add panneer and vegan version, add tofu) </li>



<li>vegetables of your choice &#8211; 1/4 cup oi &#8211; 2 tbsp </li>



<li>mustard seeds &#8211; little </li>



<li>urud dal &#8211; 1/2 tsp </li>



<li>cumin seeds &#8211; 1/2 tsp </li>



<li>green chilli &#8211; 2 chopped finely </li>



<li>curry leaves &#8211; a handful </li>



<li>asafoetida &#8211; little </li>



<li>onion &#8211; 1 medium sized </li>



<li>salt &#8211; as per taste </li>



<li>turmeric &#8211; less than 1/4 tsp </li>



<li>coriander leaves for garnishing</li>

<li>Soak ragi with half cup water. use the same cup used for measuring the ragi.</li>



<li>Heat oil in a pan. </li>



<li>Add mustard, urud dal, cumin and fry a min. </li>



<li>now add the green chilli, cury leaves and asafoetida. </li>



<li>Add the onion and saute well.</li>



<li>Add vegetables and sauté well.</li>



<li>Break eggs and scramble well with the mixture. </li>



<li>Add soaked ragi aval and mix well</li>



<li>Add salt and turmeric. Cook until crumbly texture forms.</li>



<li>Garnish with coriander and serve hot.</li>

<p>2. Place the rice and dal in the cooker with enough water as mentioned. Here I have kept them separately as shown. You can also add them together. Close the cooker lid and cook for 4 whistles.</p>

<p>4. In another pan, add the ghee and when it is hot add the cumin seeds, black pepper, curry leaves, ginger, asafoetida, cashews and fry till cashews become golden brown colour.</p>

<p>2. Cut the bread in to triangle (or what ever shape you like) and soak it in the egg-milk mixture just 2 seconds on each side. (Do not soak more than that, as you will get more eggy smell or the bread becomes more mushy).</p>

Dry roast the vermicelli till they become nice golden brown. ( you can skip it if your vermicelli is already roasted).</p>

Chop the garlic, onions and green chili and the other veggies into fine pieces.</div>

<div>4. In a kadai add oil and throw in the mustard seeds, urad dal, channa dal, chilies and the curry leaves.</p>

<div>5. When the mustard splutter and the dals turn nice golden brown colour, add the garlic and fry for a min.</p>

<p><span itemprop="description"><b><i><span style="color: #990000;">Idiyappam or String Hoppers</span></i></b> is one of my favorite dish, But, In our house, we do not make this often, as my mom was also working, she never find time for it. But next to our house, one grandma, used to sell this. So my mom used to buy this from her. I do not know how they will make it, but it was the soft and yummy and tasty idiyappams I have ever tasted. After coming here, my hubby used to get the ready made idiyappams as I do not know how to make it. But I want to try this for myself so that I can have my own fresh idiyappams. So last december when I went India, I bought the Sevei press/Idiyappam maker (Called Sevai Nazhi) the one, which is used to make the idiyappams.</p>
<p>My first experience in making idiyappams was really very tough. After 3rd <b><i><span style="color: #990000;">idiyappam</span></i></b>, I could not press the sevai at all. My hands were paining so much. I was thinking, why it is so hard to press, though I used to remove and clean the dough from the sevai each time. I actually called my hubby to press and give it for me. You know what happened, he too, could not press it, the dough has become so tight. Then my idiyappam flour, finally turned to <a href="http://www.akilaskitchen.com/2011/09/kozhukattai-modaksteamed-rice-dumblings.html" target="_blank"><b>kozhukattai</b></a>. I lost my hope of making it. Three weeks later, I got store bought idiyappam flour and I wanted to give a try again. This time, instead of adding the full flour, I added 1/2 cup flour and added 1.5 cup water and water and started pressing idiyappams when the dough is still hot and to my surprise, it came out so easily. I was so happy. I repeated the same and I find this way to be very easy. I had it with <a href="http://www.akilaskitchen.com/2016/03/idiyappam-kurma-kuruma-for-idiyappam.html" target="_blank"><b>kurma</b></a>. So, for the beginners like me, you can follow this method. Ok, now lets go to the <b><i><span style="color: #990000;">idiyappam</span></i></b> recipe.</span></p>

<p><b>Method to Prepare Idiyappam</b></p>
<p><span itemprop="recipeInstructions">1. In a bowl add the rice flour, salt, oil and add the boiling water little by little and start mixing it so that the flour gets cooked and comes to a pliable dough.</span></p>

That too the protein rich <b><i><span style="color: #990000;">Soya chunks cutlet</span></i></b> or the <b><i><span style="color: #990000;">Meal maker Cutlet</span></i></b>. Kids will definitely love this kind of cutlet, with different shapes. It is a perfect party snack, and easy to prepare too. Here I have deep fried the cutlets, and you can make it shallow fry it in a tawa itself. Both tasts awesome with simple tomato sauce.</p>
<h2 style="text-align: center;"><b><span style="color: #990000;">How to make Soya chunks Cutlet / Meal maker Cutlet</span></b></h2>
<p><b>Ingredients</b></p>
<ul style="text-align: left;">
<li>Soya Chunks (meal maker) &#8211; 2 cups</li>
<li>Potato &#8211; 1 large(boiled n peeled)</li>
<li>Vegetables &#8211; 1 cup ( I used mixed vegetables of corn, carrot, beans and peas)</li>
<li>Green chillies &#8211; 1 (chopped finely)</li>
<li>Chilli powder &#8211; 1/2 tsp</li>
<li>Coriander powder &#8211; 1/4 tsp</li>
<li>Garam masala powder &#8211; 1/4 tsp</li>

<li>All purpose flour &#8211; 2 tsp</li>
<li>Corn flour &#8211; 1 tsp</li>

<li>Salt &#8211; as per taste</li>

<h3>Method to make the cutlet<b><br />
</b></h3>

<li>Wash and Soak soya chunks in water for 20 to 30 mts.</li>
<li>Squeeze out the water completely.</li>
<li>Grind in a mixer grinder or food processor.</li>
<li>Cook the vegetables with little water and a pinch of salt.</li>

<li>Now in a big vessel, add the grinded soya chunks, chilli powder, green chillies, coriander powder, garam masala and mix well.</li>
<li>To this add the potato, and smash it nicely.</li>
<li>Now add the cooked vegetables, and salt and again mix nicely to form a thick dough consistency.</li>

<li>In a small bowl, add the all purpose flour and corn flour and mix water to it.</li>
<li>Now dip the cutlet to the all purpose and corn flour mix and immediately put it into the bread crumps and turn it to the other sides also, till they are well coated with the bread crumps. <li>Can be saved in fridge for 3 to 4 days and used again later.</li>

<p><b>For Rolls</b></p>
<ul style="text-align: left;">
<li>In large pan, add the all purpose flour, mix the yeast, sugar and salt well.</li>
<li>Now add the butter and&nbsp;add the Milk, little by little and if needed, add the water little by little to make smooth soft dough.</li>
<li>Add oil, and knead the dough nicely until, it becomes soft.</li>
<li>Cover the dough with a wet cloth and leave it for 1 to 2 hrs or until it doubles in its size.</li>
<li>Now beat down the dough so that the air in dough goes off.</li>
<li>Divide the dough in to four equal parts and spread it with the garlic spread.</li>
<li>Now roll the dough and leave it for another 30 min in the baking pan.</li>
<li>Pre-heat the oven to 180 degree celcius.</li>
<li>Place the rolls in the oven and bake it for 20 to 25 min until, the aroma of garlic spread can be smelt.</li>
<li>Hot and Soft Garlic rolls are ready to be served.</li>
</ul>

</li>

<div style="clear: both; text-align: left;">Pepper corns &#8211; 2 tsp</div>
</li>

<div style="clear: both; text-align: left;">Heat the Dosa Pan and sprinkle the rawa dosa batter.</div>

<li>Rice Sevai &#8211; 2 cups</li>
<li>Carrots &#8211; 1/4 cup (small pieces) </li>

<li>Raw Mango &#8211; 1/4 piece (grated or cut into thin lengthy pieces) (optional)</li>

<li>Bengal gram dhal &#8211; 2 tsp</li>
<li>Mustard &#8211; a pinch</li>

<li>Curry Leaves &#8211; few</li>
<li>Coriander leaves &#8211; few for garnishing</li>

<p><strong>Method</strong></p>
<ul>
<li>In a large bowl, add little salt and rice sevai and pour the hotwater on it till it gets soaked well and cover with a lid and leave it for 4 to 5 mts.</li>
<li>It becomes soft and filter the water from it and keep the rice sevai aside.</li>
<li>In a pan, add oil, mustard, urud dhall, bengal gram dhall and fry for few minutes.</li>
<li>Add curry leaves and green chillies to it.</li>
<li>Now add the vegetables &#8211; carrot, peas and corn and fry them nicely.</li>
<li>After the carrot becomes soft, add the grated mango pieces and just fry for an minute.</li>
<li>Mix the rice sevai now with this and mix well and cook for few minutes adding salt.</li>
<li>Garnish with coriander leaves and serve hot.</li>

<li>Do not add the mango pieces along with other veggies, since it gets cooked easily and you cannot get the crunchy taste. </li>
