<p>Carrot halwa is one of the famous Indian Dessert which is served in marriage functions with icecream. Though i dont like this combo, many people do love it. In those halwas, You will get a little crunchy taste in some of the carrot halwa and it is due to the adding of khoya. </p>



<p>Carrot halwa can be made either in a traditional way with milk or with quick versions like using condensed milk or carrot halwa using khoya or mawa which really takes only half the time of the original/traditional halwa. This carrot halwa can also be prepared in microwave or in pressure cooker. </p>

For 1 bowl ( 2 tbsp)</div></li><li id="wprm-recipe-3228-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add the chopped cashews and some raisins.</div></li><li id="wprm-recipe-3228-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Fry them till cashews becomes light brown.</div></li><li id="wprm-recipe-3228-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Remove them from the pan and keep aside.</div></li><li id="wprm-recipe-3228-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">In the same pan, add the grated carrots.</div></li><li id="wprm-recipe-3228-step-0-8" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Saute them nicely in the ghee itself. We are not going to add any milk to cook the carrots. So we need to saute them nicely.</div></li><li id="wprm-recipe-3228-step-0-9" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">It took around 12 minutes for me for the carrots to cook in ghee alone. The quantity also reduced.</div></li><li id="wprm-recipe-3228-step-0-10" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Add the khoya or mawa and sugar.</span></div></li><li id="wprm-recipe-3228-step-0-11" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Let the khoya and sugar melt and carrots gets cooked with this also.</div></li><li id="wprm-recipe-3228-step-0-12" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Khoya melted nicely.</div></li><li id="wprm-recipe-3228-step-0-13" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Adjust the sugar if you need.</div></li><li id="wprm-recipe-3228-step-0-14" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">When the halwa doesn’t gets stick to the sides, then it is the right consistency.</div></li><li id="wprm-recipe-3228-step-0-15" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Lower the flame now.</div></li><li id="wprm-recipe-3228-step-0-16" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add the cardamom and the fried cashews and raisins. <p>Take the carrots.</p>

<p>Grate the carrots. If you have more carrots, then chop the carrots in a medium sizes and grate in a mixer grinder.  </p>

<p>In a pan, add 4 tbsp ghee. For 1 bowl ( 2 tbsp)</p>

<p>Add the chopped cashews and some raisins.</p>

<p>Fry them till cashews becomes light brown.</p>

<p>Remove them from the pan and keep aside.</p>



<p>In the same pan, add the grated
carrots.</p>

<p>Saute them nicely in the ghee itself. We are not going to add any milk to cook the carrots. So we need to saute them nicely.</p>

<p>It took around 12 minutes for me for the carrots to cook in ghee alone. The quantity also reduced.</p>

<p>Add the khoya or mawa and sugar. (sugar is added only half amount first).</p>

<p>Let the khoya and sugar melt and carrots gets cooked with this also.</p>

<p>Adjust the sugar if you need.</p>

<p>When the halwa doesn&#8217;t gets stick to the sides, then it is the right consistency.</p>

<p>Add the cardamom and the fried cashews and raisins. Mix them well.</p>

<div><b><i><span style="color: #990000;">Apple Beetroot and Carrot Juice aka ABC juice</span></i></b> is a juice which I started to like 3 months before. Yes just 3 months before only. I really don&#8217;t have idea that beet root can be used in the juice. In my office canteen, they opened a new juice shop and in the juices list, they mentioned <i><span style="color: #990000;">ABC juice</span></i>. Wondering what it could be, enquired the shopper and she said it is <i>Apple Beetroot and Carrot juice</i>. I just ordered with a doubt how it might taste and to my surprise, I loved the juice in the first sip itself. From that time, I used to order this juice without sugar and ice. I really love it without sugar and ice. They have a big juice extractor to prepare this <span style="color: #990000;"><i>ABC juice</i></span>.</div>

<div>Since i do not have it at home, I used my regular mixer grinder to do this, by adding little water and filtering it. Though the outcome was not same like the canteen juice, still I loved it. (Soon will buy the juice extractor&#8230; he he he). If you have the juice extractor, never miss to try this juice.</p>

<p>4. Add in the veggies now sprinkling little water. Here you can use the excess water of the cooked moong dal if any or you can use the ordinary water. Do not add excess water as the veggies may over cooked and may loose their crunchiness. Add in the Moong dal now.</p></div>

<p>1. Take the almonds/badam and soak in hot water for 2 hrs (it is good to replace the hot water after 1 hr, with some more hot water) or soak in normal water for 5 hrs.</p>

<p>3. After 2 hrs, remove the skin of the almonds.<br />4. Transfer the almonds, carrot and banana to the food processor or mixer grinder.</p>

<li>Rice Sevai &#8211; 2 cups</li>
<li>Carrots &#8211; 1/4 cup (small pieces) </li>
<li>Peas &#8211; 1/4 cup</li>
<li>Corn &#8211; 1/4 cup</li>
<li>Raw Mango &#8211; 1/4 piece (grated or cut into thin lengthy pieces) (optional)</li>
<li>Green Chillies &#8211; 3 (chopped finely)</li>
<li>Urud dhal &#8211; 2 tsp</li>
<li>Bengal gram dhal &#8211; 2 tsp</li>
<li>Mustard &#8211; a pinch</li>
<li>Salt &#8211; as per taste</li>
<li>Oil &#8211; 3 to 4 tsp</li>
<li>Curry Leaves &#8211; few</li>
<li>Coriander leaves &#8211; few for garnishing</li>
<li>Hot water &#8211; 3 cups

<p><strong>Method</strong></p>
<ul>
<li>In a large bowl, add little salt and rice sevai and pour the hotwater on it till it gets soaked well and cover with a lid and leave it for 4 to 5 mts.</li>
<li>It becomes soft and filter the water from it and keep the rice sevai aside.</li>
<li>In a pan, add oil, mustard, urud dhall, bengal gram dhall and fry for few minutes.</li>
<li>Add curry leaves and green chillies to it.</li>
<li>Now add the vegetables &#8211; carrot, peas and corn and fry them nicely.</li>
<li>After the carrot becomes soft, add the grated mango pieces and just fry for an minute.</li>
<li>Mix the rice sevai now with this and mix well and cook for few minutes adding salt.</li>
<li>Garnish with coriander leaves and serve hot.</li>

<li>Do not add the mango pieces along with other veggies, since it gets cooked easily and you cannot get the crunchy taste. </li>

<li>In a Pressure cooker, add the oil, and when it is hot, add all the spices one by one and fry till they give nice aroma.</li>
<li>Now add the onions, green chillies and ginger garlic paste.</li>
<li>When Onions becomes transparent, add the coriander leaves, mint leaves and then the carrot and peas and cook for 3 mts.</li>
<li>Now add the rice, 2 tsp ghee and fry for another 1 minute.</li>
<li>Add the water and salt.</li>
<li>Check for the seasoning and allow it to boil.</li>
<li>Close the lid and wait for 6 whistles (My cooker goes for 6 whistles, check with your pressure cooker and keep the no. of. whistles &#8211; some times it may vary) and switch off the stove.</li>
<li>Open the lid and add the remaining ghee and mix it slowly.</li>
<li>Serve hot with any raitha. [ I served it with ccc raitha ].</li>

<p><b>Ingredients</b></p>

<li>Curd/Yogurt &#8211; 1.5 cup</li>

<p><strong>Ingredients</strong></p>
<ul>
<li>Carrot &#8211; 2 (grated)</li>
<li>Onion &#8211; 1 small (chopped finely)</li>
<li>Ginger &#8211; 1&#8243; piece (chopped finely)</li>
<li>Garlic &#8211; 5 cloves(chopped finely)</li>
<li>Red chilli &#8211; 3</li>
<li>Curry leaves &#8211; few</li>
<li>Salt as per taste</li>
<li>Oil &#8211; 3 tsp</li>
<li>Mustard seeds &#8211; a pinch</li>
<li>Urud Dhall &#8211; 1/4 tsp</li>
</ul>
<p><strong>Method</strong></p>
<ul>
<li>In a kadai, add 2tsp of oil, onion, garlic, ginger, red chilli and curry leaves.</li>
<li>Saute untill the onion becomes brown.</li>
<li>Add the grated carrot and cook well till the raw smell goes off.</li>
<li>Transfer this content to the blender or mixer grinder adding required salt and blend well to a fine paste.</li>
<li>In a small pan, add 1tsp of oil, mustard seeds and urud dhall and curry leaves.</li>
<li>In a bowl, add the carrot paste and the above thallipu and mix well.</li>
<li>Serve as a side dish for idli or dosa.</li>
